Tuxedo Brownie Bites

      Back in my single days, I attended a Pampered Chef party.  I had no idea what I was getting into.  The entire time, I was completely overwhelmed.  Mind you, back then, my cooking skills were limited to opening a can of Spaghetti O's and an occasional grilled cheese.   The gal hosting the party kept showcasing how to use all the nifty gadgets and how to cook this and that.  It was pretty much a foreign lecture for me.  I couldn't wait for the party to end.  But then.  Then, these babies were brought out, and after one bite, I wanted everything being sold.  Luckily, I was single, and broke.  Otherwise I would have bought the whole shebang.
      Since then, I have been looking for the recipe.  Finally found it.  It has been floating around Pinterest and other sites and is definitely worthy of being made.  I use My Mom's Brownies recipe for this, but to make life easier, you can definitely just use a package of brownies.

Tuxedo Brownie Bites
Pampered Chef
1 batch of favorite brownie or
1 package fudge brownie mix
2 squares (1 oz) white chocolate for baking
2 tablespoons milk
8 oz cream cheese, softened
1/4 cup powdered sugar
1 cup frozen whipped topping, thawed (i.e. cool whip)
Sliced strawberries or raspberries
  1. Preheat oven to 325 degrees Fahrenheit.
  2. Spray mini muffin/cupcake pan with nonstick cooking spray
  3. Prepare brownie batter according to recipe or package directions.
  4. Fill wells of pan two-thirds full.
  5. Bake 14 minutes or until edges are set. (Do not over bake.)
  6. Remove pan from oven; immediately press tops of brownies to make indentations. Let cool in pan for 15 minutes.
  7. Remove brownies from pan; cool completely.
  8. Repeat with remaining batter.
  9. For the topping, combine white chocolate and milk in large microwave-safe bowl; microwave on HIGH for 1 minute. Stir until smooth; cool slightly.
  10. In large mixing bowl, combine cream cheese and sugar; mix well.
  11. Gradually stir in white chocolate mixture until smooth.
  12. Fold in whipped topping until completely combined.
  13. Pipe topping onto brownie bites and top with sliced strawberries or raspberries.
