Amazing No-Knead Rolls

      When I first got hitched to My Giant, I kept trying a bunch of new roll recipes.  Most of them were epic fails.  I always wondered if it was the recipe, or the fact that I didn't have a fancy mixer to make the rolls in.  Or if it was just me, making them wrong (usually the case).  So when I found this recipe that required no mixer and no kneading, I was like, "giddy up!"  And you know what?  They turn out amazing. every. single. time.  I can't seem to mess these babies up!  I have seen similar recipes floating around on other sites, but I think I originally found these rolls at Lil' Luna.


Amazing No-Knead Rolls
Adapted from Lil Luna

Ingredients
1 Tablespoon yeast
¼ cup warm water
½ teaspoon sugar
1 cup warm milk
½ cup vegetable oil
½ cup sugar
1 teaspoon salt
1 cup bread flour
2 eggs
3-4 cups bread flour
butter, melted

Directions

  1. Proof the yeast by mixing yeast with the warm water and adding ½ teaspoon of sugar in a small bowl.  Set aside until foamy and bubbly.
  2. In a separate large bowl, mix together warm milk, oil, ½ cup sugar and salt.
  3. Add 1 cup flour to the mixture and mix well.
  4. Add eggs and beat until mixture is smooth.  Add the yeast mixture and mix again until smooth.
  5. Add 3-4 cups of flour, and mix until well incorporated.  Dough should be sticky.  Transfer dough to a separate bowl, cover, and let rise until doubled in size.
  6. Once doubled, punch down dough and divide in half.
  7. Roll the dough out on a floured surface making a 2, 12-inch circles.
  8. Brush the dough with melted butter.
  9. Cut the circles with a pizza cutter into twelve slices.
  10. Roll the slices from the outer edge, to the inside, making a crescent roll, and place on a greased pan.
  11. Cover dough and let rise until doubled.
  12. Bake at 375 degrees 15 – 20 minutes or until lightly browned.
  13. Brush with melted butter right out of the oven.

  3. I feel so guilty saying this because my hips sure don't need them, but I LOVE rolls!! I will definitely have to try this recipe!
