Anyone else out there watch Food Network Star? This is the first season that I have really watched, but My Giant and I LOVE it! That is, until last night when they sent Nikki home. Not happy. At. All. I was really rooting for her and excited to watch her show, but now it will never happen. Sad day.
On to the food. My Giant and I have a local mexican restaurant that we hit up at least once a month. We also take our Little Giant with us, and lately he has been eating an entire adult sized plate! Seriously. He just turned two and can out-eat me! Besides the chips and salsa, he especially likes the rice. So I thought to myself, self, I bet I can make this rice at home. Behold, I can, and it is simple and delicious. My Little Giant ate it up! Now my Little Giant can enjoy spicy rice more often!
Easy Spanish Rice
2 T. oil
1/2 onion, chopped
1 ½ cup uncooked white rice
2 cups chicken broth
1 cup chunky salsa
- Heat oil in large skillet over medium heat. Add onion and cook until translucent, about 5 minutes.
- Add the rice to skillet and stir often. When rice begins to brown, stir in chicken broth and salsa.
- Reduce heat and cover for 20 minutes until water is absorbed.
- Fluff with fork before serving
