Big B. Banana Bread. The name comes from My Giant. This is his mom's recipe, but he has inherited it as his. Our last name starts with the letter "b" hence the name. My Giant makes this fairly regularly. In fact, I have only made it a handful of times, since he insists on baking it himself. Almost everyone I know has a "go to" banana bread recipe, but here are some tips that we use in this bread that you can try in your bread, or just try out this recipe.
Tip #1
First off, we usually make this bread in a standard 9x13 cake pan. It cuts the baking time in half and can feed more people. I also find it to be a little more soft that way. I baked it in a standard bread pan this time for no other reason than my cake pans were dirty and I was to lazy to clean them.
Tip #2
Use roasted bananas! If you have an extra 15 minutes, include this step! It sweetens the bananas ten- fold and makes the bread so much more flavorful! To roast the bananas, place them in a pan lined with aluminum foil. Cook the bananas in the oven that has been pre-heated to 350 degrees for 12-15 minutes. You know they are done when the peel is blackish and it is oozing a small amount of liquid. Here is a picture of my roasted bananas. Don't judge the picture quality since I took it in our basement kitchen apartment that has zero natural light.

Big B. Banana Bread with Roasted Bananas
½ c. oil
1 c. sugar
2 eggs
3 bananas (roasted)
2 c. flour
1 t. baking soda
½ t. baking powder
½ t. salt
3 T. milk
½ t. vanilla

Roast bananas according to note below.

Mix together all dry ingredients
3 .
Add oil, eggs milk and vanilla and stir until
well incorporated.
4 .
In a separate bowl, place the roasted peeled
bananas and mash with a fork (see note below for roasting bananas)
5 .
Add bananas to the rest of the ingredients and
mix together.
6 .
Grease 1 loaf pan and add mixture.
7 .
Bake at 350 degrees for one hour.
We often do this recipe in a 9x13 cake pan. If you use that, decrease time in oven
to 30 minutes.
Note:
Roasting bananas adds a new level of depth to banana
bread. I highly recommend it if
you have time! To roast the
bananas, put 3 bananas in a pan and place in a pre-heated 350 degree oven. Cook the bananas for 12-15 minutes
until the peel is blackened. Take
bananas out of oven and let cool completely before removing fruit from peel.
